We’re a small kitchen. Our focus is on creating absolutely banging fried chicken and waffles… and making them gluten-free. Chef Adam’s wife is coeliac so he knows the trouble those on a gluten-free diet have in finding great food. Making really good tasting gluten-free fried chicken is not easy but we think we’ve cracked it.
But that does mean we can’t at the moment cater to those with lactose intolerance, and we don’t yet have vegetarian or vegan options. Now Adam has a kitchen to experiment in, he’ll be working on creating some vegetarian options that will be as good as the fried chicken. But that will take some time – we won’t put anything on the menu that we’re not super proud of, and to develop those dishes isn’t just about throwing some mushrooms in a fryer and plonking them on a plate. We hope you understand.
